Your readings indicate your tank is not cycled at all. Ideal results would be
Ammonia: 0
Nitrite: 0
Nitrate: < 20
pH is kind of the inconsequential in the equation. It isn't as important for O's, just so long as it's not marine level 8.3 or discus level 6.4.
My personal suggestion, provided the tank is empty, get a bottle of ammonia from a hardware store and begin a cycle. There's a link in the helpful articles section that outlines it very well.
One thing I am curious about, why is your temp fluctuating 2-4 degrees over a day/night cycle? Is your tank placed near a window or under a heat/air conditioning vent? Your temp should be stable around 78 or so, if you're creeping into the 80's that might be worth investigating. Reason being, while 82 won't hurt the fish, swings of that much can put stress on the tank inhabitants and may be the cause of your problems.
